Kale-Cranberry Quinoa Salad


DELICIOUS and REFRESHING!!!

Kale-Cranberry Quinoa Salad

2 celery stalks, diced
3 scallions, chopped
1 large leaf of kale, deveined and finely chopped
1/4 cup dried cranberries, chopped
1/4 cup pumpkin seeds
1 cup cooked, rinsed and cooled quinoa
2 Tbsp olive oil
2 Tbsp rice vinegar
salt and pepper to taste

Mix together and let marinate for at least an hour in the fridge.

1 Cup Serving =
1/2 YELLOW
1/4 GREEN
1/2 ORANGE
